Quinoa Amongst Crimson Lentils, Swiss Chard, Feta, Mint & Pistachios

Quinoa amongst Red Lentils, Swiss Chard, Feta, Mint & Pistachios

1 loving cup cherry-red lentils

1 tablespoon olive oil
1/2 cherry-red onion, finely diced
two cloves garlic, minced
1 teaspoon aleppo pepper
pinch of kosher salt
1 bunch Swiss Chard, ribs removed as well as sliced thinly

juice of two lemons
two tablespoons olive oil
freshly dry soil dark pepper
1 bunch mint, leaves torn
1/4 loving cup feta, crumbled
1/4 loving cup salted pistachios, roughly chopped
